    Default Buying BBQ on Weekends

    Why do good BBQ places that could sell a ton of Q on a Saturday only cook so much that they run out before 1pm?

    When they are scheduled much later in the afternoon...

    This happens consistently at three of my favorite places in Central Texas...

    Because they want to finish business and get on with their weekend!
