Mexican Food Question(For real mexicans)

Is it kosher to put fried eggs on top of enchiladas? As pictured below.

I am not a mexican and I dont play one on TV but I sell groceries to restaurants including many Mexican restaurants. I have one customer that moved here from Mexico when he was a teenager. His dad works in the back for him and I have seen him eat them many times with an egg on top.

On a side note, I never really liked Chili Rellanos. I had always had the ones out of a box that were Anahiem peppers stuffed with beef then battered and fried. They way this customer makes his are awesome. He gets fresh Anahiem peppers (softens them somehow) puts them on the grill and fills them with beef and cheese. Then he makes and egg almost like a omlet and rolls the stuffed pepper in it. then he puts the sauce and melted cheese on top.. Let me tell you if you are ever in Cross Plains or Cisco, Eat these at Mexico City Cafe.... AWESOME!
