With Memorial Day coming up this weekend, I thought it might be timely to ask everybody about their favorite BBQ sauces and rubs---both store-bought and homemade. Now don't holdback---give us your best shot--I would like to try some more really good homemade sauces and/or rubs.

I would like to find the receipe for Uncle Julio's rib rub.

I like KC Masterpeice Original for a store-bought sauce.

Me personally, I will never disgrace good meat with a sauce. Thats just me. I am a rub fan.

rub brisket down w/ yellow mustard then apply traditional rub...i like adams.....fiesta brisket rub is also good.

there are some really good ones made here in Abilene that I use alot, http://www.absolutelyworldclass.com/

I like to pickup a bottle or two of Rudys everytime I'm near one. I also like the Stubbs sauces.

I rub my brisket the day before, letting it sit for 24 hours covered in this.....

Stubb's is great both original and spicy. Cant go wrong with this *Sweet Baby Ray's* for those that prefer more sweet than spicy sauce....it's :2thumbsup

there is a guy around here that my dad used to work with and hes got his own blend of spices and we use that anytime we do ribs or brisket... dont have a clue whats in it but dang its good!

Trojan37, you are correct. That Fiesta rub is great. I also agree with another poster. Never, never, never marinate brisket with sauce. A good brisket barely needs sauce, and only then as a condiment.
I, personally, trick up most sauce I buy with such nefarious additions as Shiner Bock.

I myself have different tastes on rubs or marinades and it depends on the kind of meat.
You can marinate chicken or pork but marinated brisket tends to turn out less than desired.
Brisket is best prepared with a good rub. The best I ever bought came from Garden Ridge and was named a generic "Southwest Spice". They don't sell it anymore. Bummer.
I have found a combination of "Chicago Steak" rub combined with Paprika, Thyme, Cayenne pepper, dried Cilantro and Oregano works good when I can truly smoke a brisket(6-12 hours). If you BBQ your brisket (3-5 hours) then reduce the Thyme and Oregano and add a little more spicy ingredients according to your taste. Cooking the meat quicker tends to cook out strong flavors and makes the meat tougher. The key is knowing how to pick out a good brisket(many do not).
You can marinate certain fishes but only for so long. No more than 30 minutes or it dominates the overall flavor.
I hope to BBQ some 1-1/4" to 2" Rib Eyes this weekend, with a little rub and some high heat to seal in the natural flavor of good steaks.

Joe Allens is still here, they moved around the corner from Treadaway to S11th. It really has gone downhill imo. Joe and Sharon split several years ago. She first opened Lytle Land and Cattle Company, then Sharons BBQ in the old Pizza Inn building on East Highway 80. Its good bbq, nowhere near Harolds, but good.

I have made my own rub before, but was never able to make one any better than the Fiesta Brisket rub. My wife's uncle out in San Angelo makes and sells one called "Erwin's Voodoo Rub". It's quite good too.

For steaks, it's Fiesta's Texas Style Fancy Steak Seasoning or Fiesta's Uncle Chris'.

The best BBQ sauce I have ever had is Texas Wild from Meier Ranch foods in Fredricksburg.

Steaks, we like the Salt Lick rub.

For great color and a little zing to your chicken, beef or pork, I've used STUBBS MOPPIN' SAUCE. That stuff is MAGIC!

I make my own seasoning and it start with Reo Rub and if I tell you what I put in it I would have to kill you LOL....... JK But if you really want to know pm me and I will share it with you . I made a believer out the camera crew for ABC 13 and 97.9 the Box at a tailgating party last year in Houston at the Texas showdown game between Wheatley and Yates , they thought I owned a
B B Q restaurant and was shocked to find out from my classmates
that I coach instead . :clap:
