Both of your examples are at least partially correct. In the first case, infantry is a classification or designation, so it's a common noun and not capitalized. In the second sentence, 17th Alabama Infantry would be capitalized because it's the name of a specific unit and a proper noun. I don't think Alabama infantries would be capitalized, though.
