If you are playing a par 5 and get it in in 2 shots is it called a double eagle or albatross?

Yes but technically it's 3 under par.
A hole in one on a par 4 would be an albatross as well but a hole in one on a par 3 is an eagle.

And really a double eagle isn't a double eagle it's an eagle and a half.

Double Eagle and Albatross are the same thing. Either a hole in one on a par four or a 2 on a par 5. Or, if you are playing in Breckenridge you can make a 3 on a par 6 (which is the only par 6 I have ever seen.)
