6-8 filletts of speckeled trout
1 bottle of liquid crab boil
4 boiled eggs
1 green apple
sweet relish
mayonaisse

boil fish in water and crab boil until done(4-5 minutes)
mash fish in a bowl
basically make a jacked up tunafish however you like it:D
also works well with crappie or other saltwater fish

my dad butterflies shrimp and cooks them.. when they are about half way done he takes a sauce, made of

a stick of real butter
chili powder
lemon juice
garlic
worcestershire sauce

bring to a small boil and brush on the shrimp and let them finish cooking.... OMG its heaven!

i cut my king mack into steaks...
soak them in italian dressing for a few hours in the fridge...
add a little lemon juice and tony chachere's cajun spice...
wrap in aluminum foil and grill for about 10 mins each side...
remove aluminum foil and sear directly on grill for 1 min/side...
very good w/ some spicy boudin or butter stir-fried veggies

I'm gunna start grillin' fish... not a big fish eater, but when ate it's fried... I don't even keep fish, but I might start...

should have gotten with me about a month ago lost... went wading and brought in an 18" speck but the porpoise showed up and drove the other fish away from my area right after I caught it... gave the fish to a couple fishing the shore because it died on the stringer...

I woulda mailed it to you :D

My favorite seafood, is jumbo stuffed shrimp with blue crab stuffing. Here's the recipes...

Blue Crab Stuffing

1 lb blue crab claw meat
1/2 c. finely chopped onion
1/2 c. finely chopped celery
1/4 c. finely chopped bell pepper
1 clove minced garlic
2 cups crushed rich cracker crumbs (Ritz or Townhouse)
2 T. chopped fresh parsley
1 t. dry mustard
1/4 t. salt
Dash cayenne pepper
1 beaten egg
1/4 c. milk
1/2 c. melted butter
1 t. worcestershire sauce

Place crab meat in large mixing bowl. Pick through to remove any remaining shell and cartilage. Stir in vegetables and dry ingredients. Add 4 remaining ingredients and mix thoroughly.

Stuffed Shrimp

Butterfly desired amount of jumbo shrimp by removing shell except for the last tail segment. On underside of shrimp tails, cut nearly all the way through. Slightly flatten tails by pressing with the fingers. Arrange shrimp on a prepared baking dish. Place at least a tablespoon of the blue crab stuffing on each shrimp. You then bake for 5 minutes @ 350 degrees.

Another way we slightly vary this recipe is by wrapping the stuffed shrimp with bacon before cooking or adding some crumbled fried bacon (+grease) to the stuffing.

Both of these recipes were prepared by Annette Reddell Hegen, Marine Advisory Service, Texas Agricultural Extension Service and Sea Grant College Program, Texas A&M University and Texas Parks and Wildlife.
