Eggplant Parmesan

Ummmm! Mrs. Pudlugger just prepared two big casseroles of her wonderful eggplant parmesan. It was so full of home made tomato sauce and fresh grated parmesan it was delightful. Does anyone else on this board like eggplant?

I love Eggplant - just about any way it can be prepared - I was watching Rachael Ray a while ago and she was in Laguna Beach CA and ate at this neat little sandwich shop that made a sandwich on a long French baquette - with goat cheese, grilled eggplant, cilantro and fresh tomatoes..... OMG it looked wonderful.......
