Ingrediants:
6 Tblsp Veg Oil
8 corn tortillias coursley chopped
6 cloves garlic minced
1/2 cup chopped fresh cillantro
1 onion - chopped
1 (29 oz) can diced tomatoes
2 Tblsp ground cumin
1 Tblsp chili powder
3 bay leaves
6 cups chicken broth
1 tsp salt
1/2 tsp ground cayenne pepper
5 boneless, skinless chicken breasts halves cooked
Directions:
In a large pot, heat oil. Add tortillias, garlic, cillantro, onion. Saute 2-3 minutes. Stir in tomatoes and bring to a boil.
Add cumin. chili powder, bay leaves and chicken stock.
Return to boil, reduce heat to medium add salt and cayene. Simmer for 30 minutes. Remove bay leaves and stir in chicken. Heat through and serve.
