Let's see I get home from work around 5:15 hmmm prep time, get it on the stove, make my hot sauce and pico d'gallo, wash a load or two of laundry, grab a quick shower.... oh about 7:30 how's that...

Enriques makes a real good tortilla soup. Thats where I usually have to get it.

We tried to do a Downlow Cookbook a couple of years back...but it didn't go over well.

Now that we have so many women on the board, we may just have to take it upon ourselves to compile one!:D

Works for me. I'll bring the tortilla chips and a bottle of Jose.

Not really. Jose almost got me killed a couple of times and we had to part ways.

The cook book would be great. I think the food threads go over so well b/c we are all starving... Kinda like when you go to the Grocery store hungry lol that's a no no!!!

Chicken Tortilla Soup

You can cut this recipe down but I feed a herd everynite so...

1 Cut up whole chicken
6-8 Leg Quarters (includes thigh)
6 Cans Chicken Broth
4 Cans Rotel (do not drain)
2 Large Onions diced (optional)
6 Serrano Peppers diced
1 Stalk Celery chopped
2 Packages Green Mole (Mexican Food Isle)
2 Cans Green Chilies
1 Can Green Enchilada Sauce
10 Corn Tortillas raw cut into 8 wedges
Garlic Powder, Comino Powder, Salt to taste

Boil Chicken in Broth, de-bone. Add all ingredients except tortillas.
Cook until Veggies are tender. Add tortilla wedges. Heat until soft.

Serve with your choice or all: Pico d'galo, hot sauce, cilantro, avacado wedges,cheese, sour cream just whatever your family prefers.... Enjoy

My altime favorite is SanteFe soup, it's a different version of Taco Soup! Also, cambells chicken noodle is ok if you're on the run! But tonight we cooked Greunau sausage and cheese noodles! Bet no one on here cept 44 and a few of the other Cuero posters knows where Greunau, TX is!
