Actually, it's "boudin"-- and it's "andouille" sausage that is used in some of the Cajun dishes.

And so it seems, spivey. In all my years in Louisiana I never saw the spelling "boudain"---who cares, it's good any way you spell it, mes ami.

Aw, I wasn't trying to "call you out" or anything. Similarly, I've never seen it spelled boudin (and my roots are east of the Sabine and west of the Mississippi). Just like I've never heard of it (regardless of how it's spelled) in gumbo. :cool:

Man, a bowl of chicken and sausage would be REAL good tonight! :thumbsup: Especially with the cold temps here.

Never been to too many eating places in baton Rouge, spivey. This one looks great, and we'll have to try it on the way to New Orleans next time. Thanks.

They have a couple of locations in NO too. The one I know about is on Bourbon St. Apparantly, they have one in the Riverwalk Food Court. I don't remember seeing one there. Maybe they've put it in since I've been to the Riverwalk. There's also one in Gonzales.

Don't know, Phil.....I couldn't find any pics of Fatty Arbuckle when he was younger. In all the ones I've seen he's older and dressed a lot like Stan Laurel.
