Get you a cast iron box that you can put wood chips in and invest in a bag of mesquite.;)

Grilling is fun! 66's idea is golden. Also experiment with different wood chips for different flavors.
Apple chips for pork.
Mesquite for almost everything.
Oak or pecan for steaks.

Owning a new grill is one of life's small but great thrills.:cool:

The fire needs to be real hot.

Steaks are supposed to be cooked fast.

If at all possible, NEVER freeze a steak. They are always better if you prepare them fresh as is almost anything. Steak cooked over mesuite after being sprinkled with garlic salt and coarse ground black pepper is great! If you come to the meet and greet, I'll give you a bottle of Barbecue sauce(doubles as GREAT steak sauce) that I will guarantee you won't be able to live without after you try it.;)

I agree. Otherwise it's difficult to get your steak just right. I like mine rare to medium rare and having a poor fire just doesn't do the trick.
Also, pull the steak off several minutes before your desired doneness. It will cook for up to 5 minutes after you take it off the grill.

Wal-mart has 'em @ less than $10.00, but theirs have slits in the lid that are too big. What I did was cover the lid in heavy foil then punched four small holes with an icepick along the length of each slit. If you don't cut down the opening, the wood will flame up instead of create smoke.

Fiesta Foods (in San Antonio) makes a great chicken rub, steak rub, rib rub, you name it, they got it. The company that makes it is called Bolner's, but it's marketed under the "Fiesta" brand name. Chicken works good placed over a can of beer too.

If it has a glass top be careful of water pistols and kids. Mine was hot and got hit by a water pistol are exploded.

I now use a method my uncle taught me not to long ago when cooking chicken. To keep it from drying out you can do one of 2 things. You can put all of your seasoning in olive oil and baste both sides before you put it on the grill. When you flip the chicken baste it again, flip (baste) etc...

Or you can use a squirt bottle of olive oil to wet the chicken on both sides and then put seasoning on. Put it on the grill and each time before you flip the chicken give it a little squirt on the side you are about to put face down.

I have cooked chicken for the past 2 weekends using this method and it works really well. Just my .02!!! (Kick it up a notch) :D

In case you're interested we do this at the Texas Roadhouse. Take the stake and singe the outside on some sort of flat surface before grilling. This keeps the juices in the steak as it cooks.

I will hear no more of it....I am gonna go out and get a new grill this weekend....I have a nice charcoal one...but I dont like using it on my APT balcony. Gas...here i come!

by the way...texas roadhouse has the best steak of any restaurant I can afford to eat at. My wife agrees!

If you want an incredible cooker get a Big Green Egg. You can cook steaks at 700F. And smoke at 225F. It uses lump charcoal. It provides a clean burn. You would be surprised at what kind of fillers go into store bought charcoal. Soak a couple of pieces of your favorite wood and you have an award winning treat. Try the Kobe beef. A bit pricey, but a must try experience.

vfunk, if you're near one, shop at Academy. They have a small Char-Broil for around $99 tank and all. I bought my son one and he loves it.

thats what i got but i got the better one....it was 148......comes with empty tank and a side burner as well....
