Not what is it, but WHERE is it?? There are many kinds, but I am partial to the sausage from a German sausage-maker over in Luling. I know where to go to get to his place, but forget the name of it. I've tried all the Lockhart places, and many others around this great state. I grew up in Goliad, a town full of good German sausage-makers. New Braunfels has its Wurstfest, but I still prefer the sausage from Luling. A man in Goliad("Chili" Metting) used to make our deer sausage in patties and links, and man was it good!!! This was back in the late 60's/early 70's, so I'm sure he's not around any longer to make this great recipe. He was our family butcher, and back then we had grass-fed beef stocked in the freezer, along with deermeat, venison sausages, and the works. That was some serious meat in those days, and we produced it right there on our land.

One of my personal favorites would have to be Slovacek Sausage out of Snook(right by College Station). http://www.slovacek.com/

Some people around here really like Green's, but it got old to me. The meat-filled sausage and cheese is still pretty good though. http://greenssausagehouse.com/

Both good choices. Tallents Sausage in Riverside, Tx puts them both to shame. I wouldn't have believed it if you had told me...then I tried it.

you talking about City Market in Luling? across the street from the RR tracks? I love their sauce!

My favorite is made in a little town west of Cuero - Lindeneau Sausage.. boiled is my preference.. 2nd is the deer/pork sausage we make every year in February.. and I prefer is dried!

go over to thorndale meat market and get you some sausage. damn good stuff.
