It is either Cameron Yoe or Cameron Yoemen. Saying Cameron Yoe Yoemen is wrong. I think people get confused and think the school is named Cameron Yoe and then add in the Yoemen. Cameron Yoe is just shortened.

The standard way of naming a school and its mascot is the school's name and the mascot. For example, Brownwood Lions, Bridgeport Bulls, West Trojans, etc. So, since your school's name is CH Yoe High School, Yoe Yoemen would follow the standard. Your school does not even have Cameron in its name. Besides, it would be fun to scream from the stands "Yoe! Yoemen!" :stirpot:
