a subject near and dear to my heart.....

florida's in livingston......wife of a minister took an empty house and started cooking, word got out and now he works for her, too much business....

sauce isn't as good as some, but ribs are perfect without sauce......

Truly great ribs require no sauce. Same goes for any meat that is really good. To me, sauce just messes the meat up!

You speak the truth. Good ribs, or any other meat for that matter, doesn't require any kind of sauce to taste good. I never add any BBQ sauce to my ribs. They taste much better without it.

I agree with hookandladder; nothing better than taking ribs off a pit that is smoking with oak and mesquite wood. Oh, and I would prefer some chilly millie's over natty's.

Yeah, its like putting ketchup on a rib-eye. If someone wants to put sauce on my ribs, I take their ribs away and make them go home.:D

BEAST depends on where you are from...some places it is kosher to have them dipped in sauce.




In my experience I like the ribs at Black's in Lockhart the best.

I completely forgot, The Salt Lick in Driftwood. The sauce makes the BBQ, there.

Back when I was in high school me and my dad would enter BBQ cookoffs...Taylor, Cameron Thorndale...anywhere not too far from home. We were at the Thorndale cookoff one year and he got a call from my stepmom that she was heading to the hospital. He left me there(I was about 16) with my brother(21 and drunk off his ass) to man the pit. I ended up getting 3rd in Chicken and 7th in Ribs...by myself

What's up! But I like the ribs I cook on the pit with dad the best no doubt

Country Tavern between Tyler & Kilgore on Hwy 31 has had the best ribs in ET for a long, long time. I haven't had any better.

Harold's in Abilene are as good as any I've ever eaten. He puts a little brown sugar in his rub which is pretty good.

Dry rub or wet? I prefer a good sweet n spicy dry rub myself. Smoked with mesquit, pecan, & cherry wood, if I can get it, 150 deg for about 8 hours. MMMmmmmm,,,nothing better.

Here's a man who knows his BBQ!

I usually use dry rub myself (I haven't been able to come up with a better rub than the one that the Salt Lick sells, so I just order it), but will glaze my ribs with a honey/beer mixture about five hours into smoking them and let it caramelize on the meat.

And mesquite, pecan, and a fruit wood is the way to go!!! I generally use apple wood instead of cherry (goes better with the glaze and it's readily available around here), but I've had the opportunity to use peach wood in the past and it's incredible!

Total agreement...in my past, I have traveled quite a lot & BBQ has always been my fair. Eaten many times at the Rendezvous (Dry) & Original Corkey's (Wet) in Memphis which I consider to be some of the best. Still prfer the Wet & Country Tavern is right there with them.
