suggest what kind of sauce piquant I should make? Dont know if I can get ahold of any frog legs up here, without gettin toasted and goin giggin for em.

I may not be from that part of Texas but I have made a lot of Chicken and Sausage sauce piquant,and I love it.

In all seriousness, crab or shrimp is probably your best bet in the METROPLEX area. I've heard that rabbit sauce piquante is good, so that might be another option for you.

This looks mighty good!!!

Louisiana Shrimp Sauce Piquant

Ingredients:

2 onions, chopped
2 tablespoons corn oil
1 cup water
3 garlic cloves, chopped
1 cup chopped celery
1 (16 ounce) can whole tomatoes
1 (16 ounce) can tomato sauce
2 pounds shrimp
6 thin slices lemon
1 cup green onions, chopped
1 cup parsley, chopped

Preparation:

Saute onions in oil. Add water, garlic and celery. Cook covered until tender. Add tomatoes and tomato sauce. Simmer uncovered 30 minutes. Add shrimp and lemon. Cover and cook 15 minutes. Sprinkle green onions and parsley on top 3 minutes before serving. Serve over rice.

Unfortunately, G2, shrimp might be costly and a little "greasy" for a while to come....:(

anything but Nutria....

I vote Gator.

I just had some Gator piquante in Houma, LA 2 weeks ago and it was absolutely amazing.

Use shrimp and add some crab meat in there...keeyah!!!!!!!
